Tomatoes Provencal

1 ½ cups fresh plain breadcrumbs
¼ cup grated Parmesan cheese
1 tbsp lemon zest
3 sprigs fresh thyme (leaves stripped from stems)
2 tbsp olive oil
Salt and pepper
4 slicing tomatoes (or more if they are small)

  1. Preheat oven to 400F.  Lightly oil a small baking dish.  In a bowl, combine breadcrumbs, Parmesan, lemon zest, thyme leaves, and olive oil.  Stir to combine and season with salt and pepper.
  2. Cut tomatoes into ½ inch slices.  Arrange tomato slices in baking dish, overlapping slightly.  Sprinkle breadcrumb mixture over the tomatoes.  Bake until tomatoes are tender and crumbs are golden brown, 15-20 minutes.
